Zesty Garlic Herb Chicken



I like chicken.  I like chicken a lot!  I am always up for different ways of marinating this beautiful tasting animal.  My husband bought the marinade I used for this dish, so I felt compelled to use it.  I actually intended for this to be put on the grill while tailgating for a Nationals’ game, but there was SO much food, we didn’t need it.  Instead, it became dinner for the next night.  This worked out well, because he got three dinners out of it and I was able to pair it with sautéed onions and garlic.  I advise cooking the onions and garlic separately, but definitely serve it together.  The crunch and flavor that the onions add compliment the savory aspects of the chicken.  I am not obsessed with having different textures in my meals by any means, but I was proud of this one.  My husband says that the pieces of chicken he ate by alone were okay, but if you have some onion with each bite, it makes all the difference.  Next time, I would add more onion due to the fact that it enhanced each bite of chicken.  This was super easy to make for a week night, and the left-overs can be enjoyed so that I do not have to cook again tomorrow.  Overall, it took 30 minutes from start to finish.  I find that most recipes are not realistic in the time involved, but, really, this one is not time consuming.  The dishes were even done 45 minutes after I started.

Ingredients
Chicken breast
Mrs. Dash Zesty Garlic Herb Marinade
Onion, chopped in large pieces
Garlic
*note: I do not give any amounts because I did not measure anything and this can be used with any amount of chicken.  I used 2 breasts, 3 cloves (which differ so much in size), and 1 onion. 

Directions
1.  Marinate chicken at least one day in advance.  I prefer to put the chicken in a plastic bag in the refrigerator for 2-3 days before cooking.
2. Barbeque the chicken on a grill or cook the chicken in a pan.
3. Meanwhile, sautee onions and garlic in a separate pan.  Set aside.
3. Cut into chicken to make sure it is cooked all the way through.  Remove from pan or grill.
4. Let chicken rest for a few minutes before slicing.
5. Enjoy 
