March Madness is a time for good sports and good food. For the Ohio State/Iowa State game, I decided to make burgers and jo jo’s. Where I grew up, we called potato wedges “jo jo’s”. This is my take on the traditional idea of a burger and fries with my own twist. It turned out to be a hit. It was quick and easy to make, so long as you have 45 minutes for the jo jo’s to cook. I will definitely make these again!
Directions:
1. Line one cookie sheet with aluminum foil. Pre heat oven to 450 degrees.
2. Combine olive oil, paprika, garlic salt, and cayenne pepper in a bowl or dish. I used a storage container because my strips were too long for a bowl.
3. Slice two russet potatoes into eighths. The result should be long wedges. Make sure each jo jo is coated with the oil mixture.
4. Spread potatoes onto cookie sheet. Bake for 45 minutes. Turn potatoes halfway through cooking time.
