I really do not like pork chops, but my husband loves them,
so I’ve been making different versions of pork chops. I have been very successful according to
him. Pork loin was on sale at my
favorite butcher, so I got 15 chops to work with over the next week and then
some. First, I made an Italian version
based upon a Giada recipe I found on www.foodnetwork.com. I sliced an onion, sautéed it with some
garlic, and then added canned diced tomatoes, along with Italian seasoning and
crushed red pepper. I prepared the pork
chops by sprinkling some salt and pepper, and then just seared them in olive
oil. After searing, I added them to the
sauce. It was a hit. The next night, I took a peach pepper jam
that I bought from the farmer’s market, added Worcestershire sauce, and some bourbon,
a little salt and pepper, and made a nice sauce. I prepared the chops the same way and served
them with the sauce and mashed potatoes.
Again, it was a hit. For the
third night, my husband looked up different recipes and found a mustard based
sauce. I used the peach pepper jam,
cooking sherry, garlic, and whole grain mustard. I prepared the chops the same way and served
it with steamed broccoli. I am on a hot streak!
Here is a picture from the second night. The sauce spread to the potatoes, but my husband did not mind at all.
