My buddies birthday is on Christmas day, so on what should be his special day, people are celebrating for a whole other reason. I believe everyone should feel special on their birthday, so I feel really bad for my friend. Also, my group of friends can never get together for his birthday, because we are all in different states visiting our families. For the past few years, we have celebrated his birthday a week or so early with a Christmas-style feast at his apartment. This year, I wanted to make something a little different. I found this recipe on a Kraft website. I ended up explaining this recipe to just about everyone who was at the birthday celebration, so I definitely had to share it on my blog. This recipe is very easy and does not take much time, other than setting in the refrigerator. I used sugar free jell-o to help cut down the sweetness and calories, and it was a hit! I plan to make this for my family for our Christmas feast.

can (20 oz.) crushed pineapple in juice, undrained

pkg. (3 oz. each) JELL-O Strawberry Flavor Gelatin

can (16 oz.) whole berry cranberry sauce

Directions
DRAIN pineapple, reserving juice. Remove 1 Tbsp. pineapple; set aside. Add enough cold water to reserved pineapple juice to measure 3 cups; pour into saucepan. Bring to boil. Add to dry gelatin mixes in medium bowl; stir 2 min. until completely dissolved. Stir in cranberry sauce. Refrigerate 1-1/2 hours or until slightly thickened.
STIR in remaining pineapple, pears and nuts.
REFRIGERATE 4 hours or until firm. Top with reserved pineapple just before serving.
