Quiche with Leftovers

I made this Saturday morning with some left-overs in the refrigerator.  I did not have any milk, so I just used water.  I did not measure much, I just went with my gut.  It turned out GREAT!  I had some left over brussel sprouts from the other night, and my husband had some ham in the frig.  I almost always have onions and garlic on hand, so of course I sauteed some up to go with it.  Garlic and onions make their way into most of my dishes...except desserts.  These little mini quiches could be made with just about anything you have left over in the frig. 
Note: I do not usually condone the use of pre-made crusts, but if I had made a home-made crust, we would have been starving and having this for dinner.  I just so happened to have a pie crust in the frig left over from another recipe.  I did not plan on making this for breakfast, but I'm so glad I was inspired to do so and it worked out.

Ingredients:

Brussel sprouts
Diced ham
Onion
Garlic
Three eggs
About an 8th of a cup of water
1 teaspoon of Cayenne pepper
1/2 teaspoon Cumin
1 ready made pie crust

Directions
1.  Preheat the oven to 350 degrees.  Spray mini muffin pan with cooking spray.
2.  Prepare the left overs by dicing or chopping.
3.  Use a cookie cutter or some type of circular tool to cut dough into circles.  Place dough into the cups.
4.  Whisk eggs, cayenne pepper, cumin, and water in a bowl. 
5.  Stir leftovers into the egg mixture.
6.  Bake 20 minutes or until the egg is set in the center.  Check often to ensure proper cooking.
