Chocolate Streusel Muffins


I promised a group of kids that I would bake them something for breakfast. Okay, I have 28 kids and not a lot of time.  I'm thinking muffins.  I normally try to encourage healthy eating, but this time I went straight for indulgence.  I almost bought a box of muffin mix, but couldn't bring myself to do it.  I researched a couple of recipes and this is what I came up with.  I would suggest only filling the paper cups to no more than 3/4 full and then making extra streusel because it's delicious.  I added some toffee bits I happened to have around the house.  Peanut butter chips would probably be good with this as well.  I got nothing but positive feedback...and kids can be brutally honest at times.  Here's the recipe:

Ingredients
MUFFINS
1 1/2 cups all-purpose flour
1/4 cup granulated sugar
1/4 cup packed brown sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup (1 stick) butter or margarine, melted
1/2 cup milk
1 large egg, lightly beaten
2 cups (12-oz. pkg.) Semi-Sweet Chocolate Morsels

STREUSEL
1/3 cup packed brown sugar
3 tablespoons all-purpose flour
1 tablespoon butter or margarine, melted
1/4 cup toffee bits

Directions
FOR MUFFINS:
PREHEAT oven to 350º F. Grease or paper-line 12 muffin cups.
COMBINE flour, granulated sugar, brown sugar, baking powder and salt in large bowl. Stir in butter, milk and egg just until moistened. Stir in morsels. Spoon batter into prepared muffin cups.

FOR STREUSEL:
COMBINE brown sugar, flour and butter in small bowl; stir in nuts. Sprinkle generously over muffin batter; press down lightly.
