I started by whisking together three eggs. I like to add milk to make them fluffy, but I was out, so I used a little water. I whisk for 2 minutes, because I want them really fluffy. Next, I spray the small sauce pan with butter flavored cooking spray. Then, I add the eggs, using a spatula to move the eggs around a little. When the eggs start to set, I add the spices. Because I am thinking pizza, I added basil, italian seasoning, crushed red pepper, season salt, and black pepper. I next add the onion and garlic. I cover the pan to allow the egg to cook better. I next add the pepperoni and cheese. I then removed the pan from heat, but kept it covered for a minute while I warmed the plate. Next is the trickiest part. I used the spatula to release the edges and bottom of egg from the pan. The moment of truth is the move from the pan to the plate. Success! I am so relieved that it does not fall apart. I use the pan to assist in flipping the second half of the egg to make the omlette.
I could not believe the fresh flavor I accomplished with this tasty dish. Every time I make an omlette it turns out differently and this was an absolutely awesome breakfast!
