One of my go-to appetizers is sausage stuffed jalapenos (see
appetizers for the recipe and story). I
was at the grocery store waiting for inspiration when I saw that both poblano
peppers and country sausage were on sale.
I thought, I can do something with this.
I started by browning the sausage in olive oil and added a chopped onion
and two cloves of minced garlic. I
wanted to roast the stuffed peppers in the oven like I do with the jalapenos,
but due to the temperature, I didn't want to turn on the oven. Instead, I wrapped the stuffed peppers in
foil and roasted them on the stove top. I
have seen people do this on television and have been wanting to try it. Tongs are a good tool to use to turn and
remove the peppers. They turned out
great and it was a nice surprise for my husband. I served them with some left-over mashed
potatoes to make a nice balanced meal.
